1. State three different ways you can preserve wine once it is opened, and explain these methods.

• Vacuum systems: A pump removes most of the air from the bottle and seals it, eliminating oxygen, which causes oxidation and extends the wine’s life for greater period of time.

• Blanket systems: Adding gas heavier than oxygen into the bottle creates a protective layer between the wine and air, extending the wine’s life for greater period of time.

• To replace the closure and store the wine in a fridge: This method only slightly extends the wine’s life, typically by a few days.

2. Describe how to use an ice bucket to chill wines.

• Fill an ice bucket three-quarters full with equal quantities of ice and water.

• Bottle is fully surrounded by iced water. 

3. Describe how to decant Vintage Port for service.

• Remove the bottle horizontally from its rack.

• Place it in a decanting basket if available or hold it carefully to avoid disturbing sediment.

• Very gently remove the top of the capsule and clean the shoulder and neck of the bottle.

• Very gently remove the cork.

• Remove the bottle from the bucket, being careful not to disturb the deposit.

• Hold the bottle in front of the light, pour the wine carefully into the decanter until the deposit can be seen near the neck. Stop pouring at this point.

4. Describe how to uncork sparkling wine.

• Remove the foil and loosen the wire cage.

• Hold the cork securely from the moment the wire cage is loosened.

• Tilt the bottle at an angle of around 30 degrees, grip the cork, and use the other hand to grip the base of the bottle.

• Turn the bottle slowly, not the cork.

• Hold the cork steady, resisting its tendency to fly out.

• Ease it slowly out of the bottle.

• Release the gas pressure quietly to avoid an explosion or a flying cork.

5. What are the best practices for wine storage?

• Maintain a cool and constant temperature (10-15°C) to prevent wine damage from extreme cold or heat.

• Store wine on its side to keep the cork moist and prevent air from entering, which can oxidize the wine.

• Keep wine away from strong light and vibrations to avoid aging and staleness.
