- Explain what Passito method is.
- Passito is used to increase the structure and the flavor concentration, and the color, in case of a red wine.
- The grapes are picked early when they are still high in acidity, and dried indoors, concentrating the sugars and flavors.
- The fermentation will not be implemented until the winter months.
