  • What is the minimum aging for Barbaresco DOCG?

  • List 4 typical primary aromas / flavors found in Barbaresco.

  • Red fruits such as sour cherry, plum, redcurrant, cranberry.
  • Floral notes such as rose, dried flower.
  • Herbal notes such as lavender, fennel.
  • Spice such as black pepper, licorice.

  • Often Barbaresco are acidic, tannic and very astringent in their youth. What winemaking technique can be employed to soften this astringency?

  • Gentler extraction techniques such as pumping over and punching down.
  • Aging in either large oak cask or smaller new oak barrique. 

  • Explain why grapes of Barbaresco are harvested earlier than Barolo DOCG.

  • The vineyard are at lower altitudes than Barolo and warmer than Barolo. Therefore, grapes ripens earlier. 
  • The vineyard is close to The Tamari river. The river creates warmer conditions which contributes to the earlier ripening.

  • Explain what Passito method is.

  • Passito is used to increase the structure and the flavor concentration, and the color, in case of a red wine. 
  • The grapes are picked early when they are still high in acidity, and dried indoors, concentrating the sugars and flavors.
  • The fermentation will not be implemented until the winter months.
