  • State and describe the climate of Chablis.

  • It’s cool continental climate. Rain falls summer and autumn. 
  • Average temperature of growing season is below 16.5 degree. 
  • Continentality is high. It has hot summer and cold winter. 

ブルゴーニュ内で、シャブリ地区はcool continentalになります。cool/moderate/warm/hotの生育期間の平均温度の境は16.5/18.5/21。

  • Usually Chablis Grand Cru wine are more complex and concentrated than Petit Chablis. What conditions in the vineyard will contribute to this style?

  • The grapes are grown on south-facing steep slopes, which maximizes sunlight exposure. As a result, grapes fully ripen and concentrate their flavor and sugar in the berries. 
  • Soil is limestone soil. 

  • You are producing Chablis Grand Cru wine which is medium-full bodied, complex with secondary and tertiary flavors. State and explain three methods you can employ for the wine.

  • Malolactic fermentation. Lactic acid bacteria converts the tart malic acid to the softer lactic acid. It makes the acid soft and mild create secondary flavor such as butter, cream, milk and cheese flavors.
  • Oak fermentation and/or maturation. (Small new oak) It gives wine complexity, flavor, and tannins. It gives wine secondary and tertiary flavors such as vanilla, cedar, almond and walnuts. 
  • Extended contact with fine lee.  Keeping the wine in contact with fine lee for extended time creates complex texture and secondary flavors such as cream, dough and bread. 

  • What is the main black grape used in Burgundy?

Pinot Noir.

  • What is the climate in the region of Burgundy where red wines are made?

  • Moderate continental climate.

Chablis以外のBurgundyはModerate climateです。

  • Describe three common climate hazards and their affect on the vineyard of Burgundy.

  • Rainfall. Summer rainfall disrupts flowering and fruit set and reduce the yield. Harvest rainfall cause gray rot and dilute flavor of grapes.
  • Spring frost. It can occur up to May. It damages or destroys the buds. Then yield is reduced. 
  • Summer localized hailstorm. They damage or destroy the vines include the buds. It can reduce not only that year’s yield but also next years too.

Rainfallの影響は、growing seasonとharvestのタイミングの2種類あります。Hailは、その年の収穫量だけでなく、翌年の収穫量にも影響を与えることに注意。

  • The most desirable vineyards such as Grand Cru vineyard often have two common characteristics in Burgundy. What are they and how does this help manage climate hazards and ripen the grapes.

  • Mid-slope. It has good drainage for rain and frost.
  • South or south-east facing aspect. It maximizes the sunlight and help grapes ripen fully. It’s also protected from west wind.
