Beaujolaisの練習問題①(英語版)です。WSETは過去問がなく、試験問題の情報が少ないです。こちらは、あくまでも自分の勉強のために個人的に用意した問題ですので、必ずしも正確性を保証するものではありませんが、記述問題の参考になれば幸いです。

- Describe the soil in the Beaujolais Cru areas.
- Granite soils.
- Low nutrient soil.
- The grape variety Gamay can often produce simple and light wines in Beaujolais. From the vineyard how would you ensure a more complex and structured wine?
Gamay is a high yield variety. The grapes should be from low-nutrient granite soil that is found in the mountain foothill in the north-west of the region. Low-nutrient soil makes the variety lower yield and concentrated. Therefore wine will become more complex and structured.
- Usually Beaujolais is light in body and tannin with red berry fruit, kirsch, banana, and sweet spices. What method of production would you employ to achieve this style in the winery?
Semi-carbonic maceration.
- Describe this process.
- An open vat is filled with whole bunches of grapes. The pressure crashes the berries at the bottom and juice is released. The ambient yeast begins fermentation and produces CO2. The CO2 fill the vat and created an anaerobic environment. The remaining intact grapes undergo carbonic maceration / intracellular fermentation. The intact berries will split and release their juice. The free-run juice is fermented with yeast off the skin. The press wine is left in contact with skins.
- Wine are soft and full of fruit with distinctive notes of kirsch, banana, bubble gum and cinnamon like spice.
- Explain what the traditional Goblet pruning method is.
- Goblet is a form of bush vine.
- After bud burst, shoots are tied together to keep the shoot vertical.
- It makes shade for grapes and better air circulation.
- Training technique in Beaujolais is traditionally Goblet. However training vines on wires is becoming popular more recently. What are the advantage and disadvantage of this.
- Training vines on wires allow to mechanization. Spraying is easier for fungal diseases.
- Mechanization. Pruning and managing vegetative growth are done easily.
- VSP is used in the trellising. Grapes can receive a more even amount of sunlight.
- VSP. Canopy management become easier. Easy to control the ripeness.
- Expensive. It costs to set up for wires and stakes.
- Even if Machine harvest is possible, it’s not suited Beaujolais. Hand harvest is required for carbonic macerated wine.
- Name four Beaujolais Crus that produce the best wines.
